A completed carrot cake overnight oats in a mason jar. Making overnight oats in mason jars is great if you have a busy schedule or need to feed your whole family in the morning. This version of oatmeal is made in a jiffy but tastes extraordinary. Since it's packed with fresh grated carrot, Greek yogurt, flax and chia seeds, it's full of nutrients. However, it tastes exactly like a decadent carrot cake. Enjoy!

You can multiply the ingredients to make several. This recipe here is one big serving, but I personally eat half and load it with fruits to have with my coffee in the morning.

Total Time: 10 minutes

Yield: 1 large serving

Ingredients:

1/3 cup plain Greek yogurt
2/3 cup any milk
2 Tbsp softened cream cheese
1/2 Tbsp flax seeds or meal
1/2 Tbsp chia seeds
1/2 tsp vanilla extract
Pinch of salt
1 Tbsp maple syrup
drizzle of honey or pinch of sweetener of choice
1/2 cup heaping rolled oats
1 carrot, peeled and grated
1/4 cup raisins
1/2 tsp ground cinnamon

Steps:

You can literally add all the ingredients in one go and stir, but I usually do the wet ingredients first, followed by the chia and flax. Stir well.

Add oats and grated carrots. Stir well.

Shredded carrots added to the oat mixture.

Stir in sweeteners and cinnamon. Aside from the maple syrup (which I find to be key in this recipe) I added a packet of stevia. You can use honey or sugar if you like.

Stir in raisins. Refrigerate for at least a few hours, but overnight is the best as the raisins will plump and the carrots will soften. Yum!
