Here's a cute little idea for St. Patty's Day breakfast or any time that day, a clover shaped egg dish!

Yield: two clovers

Ingredients:

Use your favorite green veggies. I used broccoli, green pepper and spinach.

Steps:

  1. I just mixed all the ingredients together and poured them into a shallow 8x11 inch pan and placed them in the 350 degree F oven for 25-30 minutes.
  2. I took it out and let it sit for about 5 minutes, then used a heart cookie cutter to cut out shapes. I ended up with 8 hearts, plus some extra around the edges.
  3. Plate them into a clover shape and serve.

Top o' the morning to you!
