  • 2/3 cup flour
  • 1/2 tsp baking powder
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 egg
  • 1/2 cup milk
  • 1 cup kernel corn, drained


  1. Sift together: flour, baking powder, salt, and pepper in a bowl.
  2. In another bowl, mix together egg and milk.
  3. Take your flour bowl and make a hole in the center. Gradually add the egg mixture; stirring constantly. Then add the corn and mix well.
  4. Grease your frying pan or griddle. Heat to medium. Drop batter by 2 teaspoons full. Fry until golden brown, and turn once. Keep warm in 170 degree F oven until ready to serve!

Corn Fritters I


  • 4 Tbsp. flour
  • 1/2 tsp. soda
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 5 Tbsp. butter
  • 2 egg yolks
  • 1 cup buttermilk

  • 2 egg whites (stiffly beaten)
  • 1 can creamed corn


Beat egg; add corn, flour, baking powder and a pinch of salt (and a little grated onion, if you desire). Mix thoroughly and fry by spoonfuls until golden brown. Makes 7 fritters.

Corn Fritters II


  • 1 cup whole kernel or cream style corn
  • 1 egg, slightly beaten
  • 2 Tbsp. melted butter
  • 1/2 cup milk
  • 1 1/2 cups all-purpose flour
  • 1 tsp. salt
  • 1 Tbsp. sugar


Mix well and fry on hot griddle, till golden brown.

Corn Fritters III


  • 1 1/4 cups unsifted flour
  • 2 1/4 tsp. baking powder
  • 3/4 tsp. salt
  • 1 egg, separated
  • 3/4 cup milk
  • 1 1/2 Tbsp. salad oil
  • 1 can whole kernel corn, drained
  • salad oil or shortening for deep frying


Sift flour with baking powder and salt. Beat egg white until stiff. In medium bowl beat yolk, milk and 1 1/2 Tbsp. salad oil until smooth. Gradually add flour mixture, beating until smooth. Fold in egg white, gently. Add corn and stir until well combined. In electric skillet, slowly heat oil at least 2 inches deep to 375 degrees F. Drop mixture in large spoonfuls (about 1/4 cup) a few at a time into hot oil. Deep fry, turning once, about 5 minutes or until golden brown. Drain on paper towels. Serve hot with hot maple syrup.

Original Recipe
Yield 1 dozen fritters

3 cups oil for frying


1 cup sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon white sugar
1 egg, lightly beaten
1/2 cup milk
1 tablespoon shortening, melted
1 (12 ounce) can whole kernel corn, drained

Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
In a medium bowl, combine flour, baking powder, salt and sugar.
Beat together egg, milk, and melted shortening; stir into flour mixture.
Mix in the corn kernels. Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels. Good luck.

My English Grandma's recipe for cream style corn fritters, which my Irish husband says is as good as his mothers.


1/4 c flour
1 tsp baking powder
1/4 tsp sale
2 eggs
1 small can cream style corn (8oz)

Beat eggs light and fluffy.
Stir in corn and dry ingredients.

Cook like pancakes.
