Corn Tomato Salsa
This is a quick and healthy salsa to pair perfectly with your fish tacos. To make this a fast and easy lunch or dinner, I opt to use frozen fish sticks instead and follow the packaging for your preference to reheat. Then, top off with this salsa, fresh avocado slices and sour cream. You can also add more toppings if you wish too like cabbage, cheese, hot sauce, etc.
- 2 tomatoes
- 1/2 white onion
- 1 cup corn
- 1/2 bunch cilantro
- 1 Tbsp lime juice
- 1/2 Tbsp honey
- 1/4 cup mayonnaise
- Prep your ingredients. You will dice your tomatoes, onion and chop cilantro.
- In a large bowl, add all of your ingredients in. Diced tomatoes, cut onions, corn, and chopped cilantro. Add mayonnaise, lime juice and honey.
- Toss your salsa, allowing everything to be evenly coated with the mayonnaise.
- Optional - Serve as taco with sliced avocados and sour cream. You can add other ingredients as you wish, too.
