Cucumber Mint Raisin Yogurt Salad
We eat this yogurt salad on the side of most of our Mediterranean and Middle Eastern dishes, especially ones that include meat or rice. It's really refreshing and is great as a palate cleanser. It's really easy to throw together and has fantastic textures.
Total Time: 5 minutes
- 1 cup Greek yogurt
- 1/2 cup finely diced cucumber
- 2 Tbsp raisins
- 3 tsp dried mint, crushed into fine powder
- 1/8 tsp salt
- 1/8 tsp pepper
Directions:In a medium bowl, mix all ingredients together. Garnish with fresh and/or dried mint, if desired.
