Cucumber Salad

Ingredients

  • 6 cucumbers, thinly sliced
  • 1 small white onion, thinly sliced
  • 1 cup white vinegar
  • 1/2 cup water
  • 3/4 cup white sugar
  • 1 tablespoon dried dill, or to taste

Directions

Toss together the cucumbers and onion in a large bowl. Combine the vinegar, water and sugar in a saucepan over medium-high heat. Bring to a boil, and pour over the cucumber and onions. Stir in dill, cover, and refrigerate until cold. This can also be eaten at room temperature, but be sure to allow the cucumbers to marinate for at least 1 hour.

Cucumber Salad

The cucumber salad that I had growing up was fairly simple. In a bowl place the amount of sliced cucumbers and thinly sliced onions you want, salt and pepper to taste, add apple cider vinegar to about half way up the mixed cucumbers and onions, and then add cold water to the top of the mix. Gently stir with a fork to combine, chill for a few minutes or until dinner and then serve. Half the time it never even made it to the refrigerator but went straight to the table. It makes my mouth water just to think about it. (04/27/2007)
