Makes a lot.

Ingredients:

Directions:

Cream butter and sugar until light and fluffy. Add well beaten eggs and soda that has been dissolved in hot water. Add flour and rest of ingredients. Mix well and chill.

Roll out and cut with cookie cutter.

Bake at 350 degrees F for about 10 minutes or until brown. Start checking around 8 minutes, as ovens can vary.

A great recipe for making lots of good cookies. I've substituted chopped dates in similar recipes and used chopped peanuts many times for our Girl Scout Troop who devour cookies at the rate of lightspeed.

With the additions, most often we've just made drop cookies instead of rolling them out. Works either way really. If you're going the "drop" route, just be sure to chill the dough very well. Even overnight is fine.

Thanks Granny Vi.
