to balance flavours you want to add salty, sour, and umami.

You can add salt for salty or celery, you can add lemon or lime for sour, or you can add garlic for umami. In general adding more spices too like cilantro or hot peppers helps.

Too bad I am not there! I love sweeter salsa!

It is just like when making spaghetti sauce...you can make up more of the salsa with no sugar and add it to the too sweet one to balance it out. This is the easiest and my go to method.

OR You can add some salt, pepper, and pepper flakes (my least favorite way to do it as then sometimes you get into a vicious circle of fixing).

I suggest apple cider vinegar, putting in a little at a time, waiting 20 minutes or so, then tasting. The 20 minutes would allow for the vinegar to blend into the sauce and do it's thing. You can add more vinegar as needed, but always giving some time between each add-in.

Is this homemade for just to use now or did you prepare this for canning? Just curious as to how much you have that you are trying to fix...
Do you know what you used to make your salsa sweet as most recipes do not add sugar. Maybe too much green peppers?

According to what type of tomatoes you used - canned or fresh - sometimes you can cook more of this (maybe add finely chopped onion) (and a pinch of cumin if you have it) to the right consistency and add a little at a time to your salsa to try and counteract the sweet taste.

Be sure to wait at least 30 minutes between adding your "extras" so the flavor has time to blend in the mix.

If you cannot do this and you do not wish to make it hotter by adding Jalapenos/peppers/hot sauce then you can try a little lime juice (or lemon) or maybe a tablespoon of white or apple cider vinegar. Be sure to add only a small amount at a time and wait that 30 minutes for the blend.

Be careful with adding salt as sometimes it can enhance the sweetness - just be sure to add only a small amount of anything you try.

I have 10 bottles canned but plan to empty them all back in the pot and do over. i misread the line in recipe where it called for 3/4 c apple cider vinegar and 1/4 c b.sugar. I added vinegar but then misread and added 3/4 c sugar.

So disappointed as it is so sweet. Can make another batch and mix without sugar but afraid the sweetness will carry through.

I added some lime juice. I loved the hot sweet taste but since I was making for my husband who was not really a fan of the sweet, I needed to see whatever else I could do.

You can add:
- Dash of salt and pepper
- Chop jalapeños (or roast for more flavor)
