How much cauliflower do I need to feed 60 people?
3-4 ounces of any vegetable per person.
Fresh cauliflower has some wastage, unless you plan to serve up the ribs as well. Allow 6 oz per person, about 4oz if there is a sauce. The ribs might account for 1/3rd of the weight. This allowance gives 22 1/2lbs for plain, 15lbs including sauce, so adding on 1/3rd to discount the ribs gives you around 7lbs extra for the plain, 5 extra for the with sauce option.
I do not know if you entertain large crowds or if this is a "one time thing" but I would suggest you look for a book in the library called Cooking For Crowds For Dummies.
There are many more books available but this is a really good one and you can use it free.
