Homemade Queso Fresco

Queso fresco is a lovely, fresh and springy Mexican cheese. It's awesome sprinkled on top of a salad or crumbled into a taco. It's very easy to make at home with just a few ingredients. No special tools needed.

Total Time: 45 minutes



  1. Heat milk in a large pot over medium heat until it bubbles around the edges (just before boiling), stirring frequently.
  2. Turn off heat and add lemon juice 1 tablespoon at a time, stirring very slowly.
  3. Stop adding lemon juice when curds separate from whey. Allow to sit uncovered for 10 minutes.

  5. Pour mixture into a cheesecloth lined strainer over a large bowl.
  6. Cover exposed curds with cloth, then place something heavy on top and allow to drain for 20 minutes.
  7. Transfer cheese to a bowl and add salt to taste, mixing well.
  8. Fill a round pastry cutter with the cheese to form into a disc. You can also mold with your hands.

  10. Press down on the cheese firmly with the back of a spoon, then gently lift the pastry cutter.

I use very little salt and have not found any in my area that is not too salty so I have given up trying to buy this product. I am one who will be trying to make it myself. Thank you so much for this recipe.
