Two egg bites on a plate with toast.These are a copycat version of the Starbucks version, which are $5 for two. Since I have never had them at Starbucks, I cannot say whether they taste the same, but I can say they are good. You can get a mold like I used, or use silicone baking cups.

I like this recipe because you can use any kind of shredded cheese you want, and can add cooked vegetables. In my version, I added some dried smoked fish bits I had.

This recipe can be doubled if you stack the dishes on top of each other. It keeps in the refrigerator a few days and can be reheated in the microwave for 30 seconds or can be frozen and reheated in the microwave 1 1/2 to 2 minutes.

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Yield: 7 egg bites

Ingredients:

Ingredients for egg bites.
 

Steps:

  1. Put a cup of water in the instant pot and add the trivet.
  2. An Instant Pot with a metal trivet in the bottom.

  3. Blend the eggs and cheeses for about 30 seconds until smooth.
  4. Eggs in a measuring cup.
     
  5. Add the cooked vegetables or other additions and pulse once or twice.
  6. Divide evenly into the egg cups.
  7. A orange silicone egg tray for the Instant Pot.
     
  8. Cover with foil.
  9. Aluminum foil covering the egg tray.
     
  10. Set onto trivet.
  11. Set the instant pot to steam for 10 minutes.
  12. Natural release for 10 minutes.
  13. Remove the tray and the foil. Allow to cool for a few minutes before removing the egg bites.
  14. The egg tray with cooked egg bites.

I received a silicone tray like that as part of my Christmas gifts. I will have to try this recipe. It sounds perfect for a quick breakfast.
