Kidney Bean Salad

Not one of my favorites, but many people do like this, so I'll offer it. I'm told it's a very good salad, for those who like kidney beans. (Not me!) :)

Ingredients:

  • 2 Tbsp. diced onion
  • 1/4 cup sugar
  • 1/4 cup wine vinegar
  • 1 large can kidney beans, drained
  • 2 Tbsp. diced celery
  • 1/4 cup salad oil
  • Advertisement

  • dash salt

Directions:

Combine above ingredients and let set 1-2 hours in refrigerator before serving.

Our family recipe had the hard-cooked egg and used thin mayo instead of sugar, oil and vinegar. It also had a little grated onion, which I think really makes it good. I discovered that this was made popular during WWII when meat was in shorter supply as an alternative source of protein. (08/01/2009)
