A boxed cake mix and extra ingredients to make it taste homemade.Sometimes I bump into a boxed cake mix on sale for SO cheap, I can't say no. Having it handy helps save precious time, but it just doesn't taste nearly as good as a cake made from scratch. Here are some tips on getting your boxed cake tasting homemade.

These are tips to make some swaps and changes from the instructions on the back of the cake mix box.

  • Add an extra egg for richer flavour, or 1/3 of a cup of sour cream.

  • Swap out the water with the same amount of milk.

  • If you're making chocolate cake, swap out the water with the same amount of brewed coffee.

  • Replace any suggested oil with melted butter.

  • Add a teaspoon of vanilla and a 1/4 teaspoon of salt to the mix.

I have to smile when I see your tips! My dad used to do these sorts of additions all the time when I was a kid, and my mom and aunt used to chide him for doing so -- follow the directions, they would say! But his cakes were better!! LOL

You can, just remember the milk can be used for white cake OR chocolate cake, but the coffee is suggested for just chocolate cake :)

I baked a yellow cake the other day and after it came out of the oven i realized i didn't have any frosting so I grabbed a bag of chocolate chips poured about 1/4 cup on the hot cake and let it melt and them spread it around best lite frosting I have had in ages . It wasn't as sweet and as think as frosting it just sealed in the cake moisture .

The few times I've made homemade cakes, they were dry, so I prefer getting help from Betty and Duncan anyway. :)

I do plan to use butter instead of oil from now on.

The only oil I use is olive or coconut, and somehow I don't think olive oil would taste good in a cake.

You're right.. olive oil would be overpowering. Coconut is a nice addition, as long as that flavour is welcomed. My mum is not a coconut fan, so I'd use butter in her case. Have fun playing with additions and let us know what you like! :)

My mom always taught me to add tsp or so vanilla to any cake mix

Even if you do just that and a tiny pinch of salt, it makes a world of a difference!

I have done these for years. I also like to sift the cake mix. That gets rid of any lumps. If the mix calls for oil, I substitute melted, but not hot butter or stick margarine.

Some mixes I add 1 t baking soda and use butter milk instead of regular milk.

I store my cake mixes in the freezer. Then take out in advance to come to room temperature, then ALWAYS sift them. These are all great ideas. Thanks to all for sharing!

I was busy in March and missed this tip so I'm glad TF presented it again as I am not a big cake maker so starting from scratch is not for me and I have never liked the "boxed" taste of most store bought mixes so these tips gives me something to work with.

If you start testing if cake is cooked after 30 minutes, it won't be so
dry. Box cakes usually state to cook too long.

Another great addition to a boxed cake to make it moist is a small box of instant pudding. I usually try to match flavors, but if you cant, a box of vanilla pudding works great.

You might want to add 1 tsp of rum, bourbon or some flavorful liqueur to your mix as well.
