Making Avocado Mayonnaise
Combine avocado, milk, Dijon mustard, lemon juice, and Tabasco sauce for a scrumptious alternative to traditional mayo.

This is an easy, healthy substitute for traditional mayonnaise. You might find that you like it even better. It also makes a good dip.
- 1 ripe avocado
- 2 Tbsp. milk
- 1 Tbsp. lemon or lime juice
- 1 tsp. Dijon mustard
- 1/8 - 1/4 tsp. Tabasco
Peel and chop the avocado. Add it and all the other ingredients to food processor and process until smooth. You can also do this by hand. Smash the avocado with a fork until it is smooth. Slowly beat in the lemon/lime juice, milk, and mustard until well blended. Add Tabasco to taste. Chill. This is best used the same day.
