Making Mango Pocket Pies

When mangos are ripe making pocket pies with the fresh fruit and instant dough are great for a picnic treat. These mango pies are fried in oil.

It's summer season here at my place. I'm starting to think of food and goodies to bring to a beach outing with family and friends. Mangoes are perfect for picnics especially when they are made into desserts.

Ingredients:

  • instant biscuit dough
  • 1/2 cup ripe mango cubes
  • 1 Tbsp brown sugar
  • 1 tsp cornstarch
  • 2 Tbsp honey

Steps:

  1. Put mango cubes, honey and sugar in a pan and scald over medium heat.
  2. Dissolve cornstarch in a small amount of water and pour into mixture.

  4. Let simmer and stir occasionally.
  5. Turn off heat when mixture is thick and mushy.
  6. Cut a portion of the instant dough and flatten.
  7. Put some of mango filling in the center.
  8. Fold the dough.

  10. Seal the sides by pressing them with fork.
  11. Fry until golden brown.
  12. And voila!
