Measuring Yeast When Making Bread?

I am looking for some help in finding the amount, in kilograms, of yeast to add to 25 lbs of flour when making bread.

One pound of flour equals 0.45 kilos. Use 10 to 15 grams of yeast to 1 kilo of flour.

Roughly 1 pound of flour equals 4 cups. Therefore you have 100 cups of flour. Every 4 cups of flour needs 2 1/4 teaspoons of yeast for the 4 cups of flour. Therefore, you are looking at 112 1/2 teaspoons of yeast. To equal 1 cup of yeast, you need 48 teaspoons.

So now you have 2 cups of yeast plus 16.5 teaspoons. For every 12 teaspoons you have 1/4 cup of yeast. Therefore, it looks like you need 2 1/4 cup plus 4.5 teaspoons of yeast to make your 25 pounds of flour.

I'm just wondering it you are wanting to "pre-mix" the yeast with the 25lbs of flour?... That is a huge amount of bread!...If you are thinking of doing that, DON'T.. Yeast is a living organism and you will face problems moving forward. There are all kinds of comments about yeast quantities. I buy yeast in bulk and add it along with salt, water, a bit of oil and a pinch of sugar... There is tons of info on the web about bread making and variations in flours, fats, sweeteners and quantities, so perhaps more information may be required in this case.
