Here is a quick gluten-free breakfast treat for those mornings when you are in a rush. Serve warm as is in the mug, or if you prefer, turn the mug over on a plate. Enjoy with a cup of coffee and voila! You can be on your way to work in no time.

Prep Time: 3 minutes

Cook Time: 2 minutes

Yield: 1 serving

Ingredients:

  • 4 Tbsp gluten-free flour
  • 1/2 tsp baking powder
  • pinch of salt
  • 2 Tbsp cooking oil
  • 3 Tbsp milk
  • 3 Tbsp grated cheese
  • 1/2 tsp dried oregano

Steps:

  1. Use a large microwavable mug to prevent overflowing. Mix together the flour, baking powder and salt.
  2. Add the rest of the ingredients and mix well to form a batter.
  3. Place the mug in the centre of the microwave oven and microwave on high for 2 minutes. When done, it must be firm to the touch.

  5. Serve warm.
Note: You can serve as is in the mug, or if you prefer, spray the mug beforehand with non-stick cooking spray, so that you can turn the mug over on a plate.

I do a muffin like this with flax meal, but I'm going to try this for variety.
