Mom's Sweet Muffins

An easy, delicious, one-bowl recipe. They freeze well. I'm sure you could add fruit or other "goodies." I like my muffins a little bigger, so I filled them 3/4 full and got 8 instead of 12. I also used Truvia instead of sugar.

Cook Time: 15-20 minutes

Total Time: 30 minutes max

  1. Preheat oven to 400 degrees F.
  2. Put all ingredients into a bowl and mix until moistened. It will be a little lumpy.
  3. Fill muffin tins 2/3 full.
