Beans are an inexpensive, healthy food. To eliminate most of the gas-causing enzymes, hot soak the beans before you cook them.
For each pound of dry beans, add 10 cups of water and 1 tsp. of salt. Bring water to a boil and add the cleaned dried beans. Blanch for 2-3 minutes. Remove from the heat, cover and leave them alone for 4 to 16 hours.
Use in a recipe, refrigerate or freeze.
