A pot of beans soaking in water.Beans are an inexpensive, healthy food. To eliminate most of the gas-causing enzymes, hot soak the beans before you cook them.

For each pound of dry beans, add 10 cups of water and 1 tsp. of salt. Bring water to a boil and add the cleaned dried beans. Blanch for 2-3 minutes. Remove from the heat, cover and leave them alone for 4 to 16 hours.

Rinse the beans and the pot with cold water. To cook the beans, cover with fresh cold water and another 1 tsp. of salt. Simmer until tender. I used pinto beans and it took a couple of hours.

Use in a recipe, refrigerate or freeze.
