Perfect Basted Eggs

I love fried eggs but I hate when the edges get crispy. I love poached eggs but they're just a bit too droopy. Basted eggs are right in between fried and poached, and they are so easy to make.

Just add a bit of butter to a hot frying pan. Fry until the white is starting to set. Add 2 tablespoons of water to the pan, then cover and cook for about a minute. If you want the yolk as hard as a hardboiled egg, just cook 30 seconds or so more. I like mine cooked all around but like a soft-boiled egg. Yum!
