Prime rib only needs the simplest seasonings and be cooked to perfection. This is one of my favorite meats because it is so versatile. You can serve your prime rib roast with mashed potatoes, roasted vegetables, rice, casserole, bread, or anything you like.

Note: Cooking time varies depending on the weight of your prime rib and if you opt for bone-in or boneless the cooking time varies if you like your meat medium or medium rare. Sometimes it takes trial and error, but having a meat thermometer is extremely useful!

Prep Time: 5-10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes + marinate time

Yield: 3-4 people


  • 3-4 lb prime rib
  • cups black pepper
  • cups salt
  • cups garlic powder


  1. Mix together the black pepper, salt, and garlic powder. I eyeballed the ingredients, enough to rub all over the prime rib (as pictured below). Then marinate in the fridge overnight or for a couple of hours prior to cooking.

  3. Preheat your oven to 325 F.
  4. Bake for about one hour or until the internal temperature reads 160 F.
