Pumpkin Pie Pudding

First off, the crock pot is a great time and energy saver. Secondly, especially in the fall, more recipes that use pumpkin are good to have, as after Hallowe'en, pumpkins can be found very cheaply.

Directions:

Grease a 4 quart crock pot. In a bowl, combine all the ingredients and mix until fully blended.

Pour the batter into the crockpot and cook on high for 3 - 4 hours, or on low for about 6. Check halfway through, then every 30 minutes thereafter. When it's done cooking, the batter will have browned and will crack in a few places. Serve at room temperature

This can also be made in the oven by baking at 350 degrees F for 50 - 55 minutes

Anyone who likes Pumpkin Pie will love this dessert. In a large bowl, combine the first eight ingredients. Transfer to a slow cooker coated with nonstick cooking spray.
