Our local newspaper runs really good recipes. This issue has cookies that sound so good. The readership is small, and these recipes should be shared.

Another favorite - with a twist, the additions of dried cherries.

Ingredients:

  • 1 cup shortening
  • 2 cups white sugar
  • 2 cups brown sugar
  • 4 eggs
  • 4 cups flour
  • 1 tsp. baking powder
  • 2 tsp. baking soda
  • 1/3 cup walnuts or pecans
  • 1/3 cup dried cherries or cranberries
  • 1 tsp. salt
  • 2 tsp. vanilla
  • 3 cups oatmeal (not instant, quick cooking)
  • 3 cups cornflakes or Wheaties
  • 1 cup coconut

Directions:

Cream shortening and sugars. Add eggs and vanilla and mix well. Sift dry ingredients together and add to mixture. Stir in remaining ingredients. Drop by tablespoonfuls on greased baking sheet. Bake at 350 degrees F for 8 - 10 minutes

For Christmas I tried making them with Raisin Bran instead of plain flakes. They were really good.
