This was a delicious meal, and very economical. You probably already have the ingredients. I doubled the recipe so I could have extra for during the week.

Cook Time: 45 min

  • 2 Tbsp all-purpose flour
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • salt and pepper
  • 1 Tbsp oil
  • 2 lb chicken pieces
  • 2 onions, sliced
  • 2 cloves garlic, chopped fine
  • 1 cup chicken broth, warmed
  • 2 springs thyme (I used dried)
  • 1 bay leaf


  1. Heat oven to 350 degrees F.
  2. Ad

  3. Combine the flour, onion powder, paprika, cayenne pepper, salt and pepper in a plastic bag. Combine well.
  4. Pat chicken dry and put in the bag. Cover pieces thoroughly. Shake off excess.
  5. Heat the oil in a large, ovenproof skillet over medium-high heat. Add chicken to hot oil and sear until brown, about 1-2 minutes per side. Remove the chicken to a plate.
  6. Add onions to the remaining oil and reduce heat to medium. Season the onions to taste with the salt and pepper. Cook 5-7 minutes, stirring occasionally, until golden brown. Add the garlic and cook about a minute, or until fragrant.
  7. Put the flour mixture that remained in the bag into the skillet with the onions. Stir to coat. Add the warmed chicken stock and increase heat to medium-high.
  8. Bring to a boil. Reduce heat until the mixture is simmering.

  10. Add the chicken and any juices to the onions.
  11. Add the thyme and bay leaf.
  12. Transfer the skillet to the oven and cook until the juices run clear, about 30 minutes.
