Brush or smear the chicken with butter. Brown it under the broiler, skin side up, just until browned; don't cook it through. Put in a deep baking dish that has a lid, skin side down. Dot with a little more butter, and sprinkle with salt and plenty of pepper. Cover all the chicken completely with the onions. There should be plenty!
Bake in a 325 degree F oven for 1 3/4 to 2 hours.
You'll have really tender, flavorful chicken and the best gravy!

Place thawed chicken breasts in a 9x13-inch casserole. Stir soup in can, then spread over chicken. Sprinkle mushrooms and cheese over chicken. Bake at 350 degrees for about 45 minutes or until chicken is done. Serve with hot buttered rice. Makes 4 servings.
