Soft Oatmeal Cookies

This recipe was the one I used often with a family of 7. With so many children, it was the easiest and cheapest recipe to make. Through the years, I have learned to slightly underbake cookies. They will be much better.

Ingredients:

  • 1/2 cup butter
  • 1/2 cup shortening
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1-1/2 tsp. ground cinnamon
  • 3 cups oatmeal (either quick cooking or regular)

Directions:

Preheat oven to 350 degrees F.

Mix butter and shortening thoroughly.

Mix in brown sugar, eggs, and vanilla. Mix together flour, soda, salt, and cinnamon. Lastly add oatmeal. Roll into balls. Smash balls with bottom of glass, dipped in sugar.

Bake 8-10 minutes or until lightly brown

Servings: 36-60
Prep Time: 10 Minutes
Cooking Time: 8 to 10 Minutes
