Spicy Cajun Black Eyed Peas

Cajun style stewed tomatoes bring a different taste experience to these wonderful traditional beans. Using canned black eyed peas makes this recipe super easy. Other ingredients featured are: Green Bell Pepper and Onion, and Bacon.

Ingredients:

Black Eyed Peas have a lot of goodies in them. They have high levels of fiber, protein, vitamin A and folic acid.

Steps:

  1. In a large skillet, cook bacon until crisp.
  2. Remove bacon, reserving drippings in the skillet.
  3. Crumble bacon.
  4. In the bacon drippings, cook the green bell pepper and the onions over medium high heat, stirring always, until tender.
  5. Add black-eyed peas, stewed tomatoes, the salt and pepper.
  6. Cook over low heat until heated thoroughly, constantly stirring.
  7. Sprinkle with bacon.

This is great for anytime. Serve them on New Years for good luck, as the tradition goes. If you don't want any Cajun in this, just use regular stewed tomatoes.
