A completed pan of spicy sausage penne.This is one of our favorite family meals. It looks like it takes a long time to prepare but it is actually done in about 30 minutes, which includes cooking time!

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: Serves 4

Ingredients:

  • 1 Tbsp olive oil
  • 16 oz smoked sausage
  • 1 small chopped onion
  • 2 tsp minced garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups chicken broth or water and chicken bouillon
  • 1 can Rotel
  • 8 oz. penne
  • l/2 cup cream
  • 1 cup Monterey Jack cheese
  • 2 to 3 sliced green onions
Spicy Sausage Penne
 

Steps:

  1. Slice sausage into pieces and cut again in halves or quarters. Chop onions. Heat oil in large, deep frying pan. Add sausage and onions. Saute for about 5 minutes. Add garlic and saute for a couple of more minutes.
  2. Frying onions and sausage in a pan.
     
  3. Next, add chicken broth, can of rotel tomatoes, pasta, salt and pepper, and cream. Cook for 15 minutes until pasta is tender.
  4. Adding cream to the sausage mixture.

  5. Add 1/2 cup cheese and stir into mixture until melted. Top with remaining l/2 cup cheese and sliced green onions. Serve!
