Spinach Artichoke Dip

I made this for a party recently and it was very well received. One of my friends has allergies to many things so this is a very simple version. It could be spiced up in so many ways to suit your own tastes.

Ingredients:

I served this dip with cauliflower, broccoli, broccoli romanesco (which I love!) and jicama. These were vegetables that my friend could tolerate, but many more veggies could be used. You could easily serve it with bread or crackers too.

Steps:

  1. Drain the quartered artichokes in a sink.
  2. Blend quartered shallots and garlic cloves in a blender or food processor
  3. Drain thawed frozen spinach by pressing it to remove liquid.
  4. In a large bowl, mix all the ingredients together.
  5. Place mixture into buttered baking dishes. Part of the mixture could easily be frozen now and baked for a future party.
  6. Bake at 350 degrees F or until bubbly and slightly brown at the edges.
