Spinach Artichoke FrittataThis delicious recipe can be served for breakfast or anytime. It's full of healthy nutrients to keep you satisfied for hours! I will bake two and cut up then freeze one to take out individually some mornings!

Cook Time: 30 minutes

Total Time: 40 minutes

The original recipe offers mushrooms and or green peppers as additional idea's to add to the mixture too. I may try them next time!

Steps:

  1. Pre-heat oven to 350 degrees F while you cut up your garlic and wash your spinach.
  2. Heat your oil in a 12" oven safe skillet. Saute garlic a minute.

  4. Add garlic and spinach to heated pan and saute for two minutes until spinach wilts.

  6. Add drained can of artichokes to pan mixture then top with shredded mozzarella.
  7. Spinach Artichoke in pan
     
  8. Whisk together eggs, milk and pepper together.

  10. Pour mixture over ingredients in pan.

  12. Bake in oven for 20 to 25 minutes.
  13. Frittata in oven
     
  14. Remove from oven and let it cool for about 5 minutes in pan. Careful! It's hot! (guess who burned herself..;)
