Spring Rolls with Masago (Fish Roe)

A nice light yet filling appetizer or snack featuring masago*. You can customize your spring roll wraps however you would like, but this is a combination I enjoy making. The amount yield varies depending how ingredients you use per spring roll. With 4 small avocados, I made 8 rolls and plenty of left over ingredients.
Prep Time: 5 minutes
- sour cream
- power greens
- spring roll wrapper
- hot water
- You will need a large bowl with hot water to dip spring roll wrappers in. Or follow your spring roll wrapper instructions.
- Lay spring wrapper down on your plate. Add your desired amount of masago, avocado, and sour cream.
- Optional - add your choice of greens. Then wrap! Ready to enjoy and repeat process to make more!
*Masago is fish eggs from capelin, a small fish found throughout the Atlantic and Pacific oceans.
