This is my take on a Vietnamese inspired chicken and cabbage salad that I learned from my mom. My mom actually uses more ingredients that I'm not a fan of, but this is my version that I enjoy.
It is very easy and simple to make. Perfect & refreshing light salad with a sour tang.
Prep Time: 15-20 minutes
Total Time: 15-20 minutes
Yield: 2 people
- 1/2 cabbage
- 1 chicken breast, cooked
- black pepper
- 1 Tbsp fish sauce
- 1 large lime wedge
- Vietnamese coriander (rau ram)
- Wash all of your vegetables. Chop into your desired size.
- Shred your chicken and add your desired amount of black pepper. I love black pepper with this salad so I add a lot!
- Combine cabbage, mint, vietnamese coriander* in a bowl with squeezed lime wedge and fish sauce. Toss and allow to chill in fridge before serving to allow the juices to absorb into the salad. Add more black pepper, lime or fish sauce if needed.
*Vietnamese coriander can be found at Asian markets. It can be omitted if you can't find it.

This is a delicious, light chicken salad. It uses a special Asian herb called Vietnamese Coriander or Rau Ram. It is super easy to throw together and will have your guests begging for more.
