Square Corn Cookies

Got a Jiffy Corn muffin mix from my in-laws. I got tired of making muffins so I'm making it into square cookies. It turned out really good.

  1. Combine all ingredients in a bowl. Mix well until lumps disappear. If possible, add corn muffin mix a little at a time so it's easier to break the lumps.
  2. Transfer in a baking pan, then chill for 3-5 minutes. Meanwhile preheat the oven at 150 C.
  3. Bake at 150 C for around 15-20 minutes. Allow to cool then cut into squares and serve.

I'm a huge fan of turning conventional boxed items into something they're not supposed to be. This looks good!

Thanks - I love imagination with food (that's why I love Attosa's recipes so much!).
