Stir Fry Vegetables with Quinoa

At the end of the week, our family uses any leftover fresh vegetables we may have. This is a perfect option because you can sauté all your vegetables with a dash of soy sauce, and oyster sauce for flavor.

Total Time: 23 minutes

Yield: 4 people

Ingredients:

Steps:

  1. Dice green onions, cut okra, chop carrots and shred cabbage. Cook quinoa.
  2. In a large pan, add dash of olive oil and add your vegetables (leave some green onions aside for garnishing later). Over medium/high heat sauté vegetables for a couple of minutes.
  3. Add cabbage. Add your soy sauce and oyster sauce. Sauté until cooked.
  4. Add some left over diced green onion to garnish (without cooking), garbanzo beans (optional) and stir into quinoa.

I love the idea of using veg on hand! At the moment, I'm experimenting with savoury steel cut oats which, when soaked overnight, also have an excellent texture and health benefits. I'll be trying these oats in conjunction with quinoa: thanks for sparking the idea!
