Sweet Acorn Squash

Acorn squash is seasonal from September to December. This recipe is simple and economical. It would make a perfect appetizer served with a cheese and cracker platter for Thanksgiving!

Ingredients:

  • 1 acorn squash
  • butter
  • brown sugar
  • olive or canola oil

Directions:

Preheat oven to 400 degrees F. Wash and dry the acorn squash, then cut in half, remove seeds and stringy core. Cut into thick slices.

Put aluminum foil on baking sheet and spread a little oil on it. Spread slices of squash on foil, butter one side then sprinkle with sugar. Bake for 10 minutes, then remove and turn over slices. Butter and sprinkle with sugar. Bake for 20 minutes and remove from oven and serve on platter

Servings: 6 to 8
Prep Time: 10 to 15 Minutes
Cooking Time: 30 Minutes

Squash has always been a holiday favorite, and Acorn or Butternut Squash are treated very much the same way. Full of flavor as well as being good for us makes it a great everyday choice too.

Follow the same directions except cook in microwave for about 9 minutes...quick and easy.

this is good recipe but there is better one. we slice the squash in half and clean add margarine and place a table spoon of orange marmalade in each half.
