Another delicious, economical, healthy meatless meal that will use up your abundance of tomatoes. I did not peel the tomatoes. It was served over brown rice and I completed the meal with a salad and broccoli.

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 3

  • 2-3 firm tomatoes, peeled and sliced
  • flour to coat the tomatoes
  • 2 Tbsp butter or margarine
  • 1 cup water
  • 1 tsp salt
  • 2 Tbsp sugar


  1. Coat the slices of tomato in the flour.

  3. Heat the oil in the skillet and quickly brown the tomato slices on both sides.
  4. Reduce the heat and add the water, sugar and salt.
  5. Simmer 30 minutes, stirring occasionally and breaking up the tomato chunks.
  6. Serve over rice, noodles, potatoes or on toast.

I am looking for a recipe for Greek Smooth Tomato gravy. I had one years ago.

I make smooth gravy without grease /oil, brown flour in skillet, about 1/2 cup or less. Remove from heat. Add water & tomatoes or what you want. Stir with whisk or fork till smooth,add as much water as you like. If lumps in gravy, strain it. The Greek spice recipe is below. Add as much as you like to gravy, simmer 5 min, good luck.


Greek spice recipe:
12 Servings
Prep/Total Time: 5 min.Ingredients
1-1/2 teaspoons dried oregano
1 teaspoon dried mint
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried marjoram
1/2 teaspoon dried minced onion
1/4 teaspoon dried minced garlic
In a small bowl, combine all ingredients. Store in an airtight container in a cool dry place for up to 6 months. Yield: 2 tablespoons.
