Tomato Sauce

If you garden, or can get tomatoes cheaply, this is a way to use them and enjoy them when winter comes. I froze my tomatoes to make them easier to skin. If you use fresh tomatoes, plunge them in boiling water and then in ice water to skin them.

Cook Time: 3 hours

Total Time: 3 hours and 15 minutes

Yield: 2 quarts

  1. Skin and chop the tomatoes. Set aside.
  2. Chop the onions and garlic. Cover the bottom of a saucepot with oil. Sauté the onions and garlic.
  3. Add the tomatoes and seasonings.
  4. Add the tomato paste.
  5. Simmer for 3 hours.
