Your Noritake is in the Versatone series but the pattern is Hofgarten and this pattern seems to be very plentiful online.
I did not see a set listed as sold or for sale but a lot of individual pieces and groups like 2-10 pieces.
China is not on most people's 'wanted' list but it seems your pattern should be more popular because it is all the things people are looking for in 'dishes' - Microwave safe/Oven proof/dishwasher safe.

You can check out the current listings on eBay and Etsy to see what type of groups people are using and their asking price. Replacements also has some items listed for sale.

www.ebay.com/.../i.html?_from=R40&_trksid=p2334524...

You have to remember that asking prices only reflect a price the seller would like to receive for their items but only an identical sold listing can display current value as it shows what someone was willing to pay for that item.
Here are items that have sold on eBay over the past several months.

Sets of china can be sold but a set would be very difficult to ship and even one broken piece can be a big problem.

Most sellers are listing items in small groups but china is generally a very slow seller so even when you see a sold item there is no way to know how long the items were listed for sale before they sold.
Here is an example:
This group has been listed for sale ($20 plus shipping) on eBay for over 18 months and still has not sold.

As a general rule, accessory pieces - platters, bowl, sale/pepper sell faster and for a little more money than just regular items.
You might want to check some of the sold prices of different pieces to see what would be a good starting price.
You can always start at a higher price with best offer and see how it goes. If no offers after several weeks then lower the price and wait again.
You may also want to check out other sites for listing; Facebook marketplace, Craigslist, offerup, letgo and lots of other sites instead of using eBay or Etsy as these sites can be tricky for new sellers/users.

You seem to have most of the pieces that are missing on all of the online sites. Replacements.com only has most of your pieces and not any of the place settings in stock. They also have areas on there page if someone what's to be notified of missing pieces that you have in your possession. Maybe there is a way to link your pieces with them to sell? I would contact them because you have a

Currently, China is not such a big seller online and people are finding it harder and harder to sell a complete set of china. Most people have resorted to selling their sets of china off in pieces because it seems to do a bit better. This takes a very long time to sell off china like this but it can be done. There are some sites that offer replacements for broken or missing china pieces. If you are looking to sell off the set you can break it down and sell it off in pieces of 4 at a time.

The extras can be sold separately. You can also try and contact a few replacement sites and see what they will offer your for your set of china. Other than this you can try to do bidding on the set of china and list this as a 7 to 14-day bid and start off by asking around $250 and see if anyone is interested.
