Vegan Tuna Salad

Ingredients for vegan tuna salad.I am finding beans full me up better than meat, poultry and fish. It is healthy and cost-effective.

Supplies:

  • 1 15 oz. can chickpeas, rinsed and drained
  • 3 Tbsp tahini
  • 1 tsp Dijon or spicy brown mustard
  • 1 Tbsp maple syrup or agave nectar
  • 1/4 cup diced red onion*
  • 1/4 cup diced celery
  • 1/4 cup diced pickle
  • 1 tsp capers, drained and loosely chopped*
  • Healthy pinch each sea salt and black pepper
  • 1 Tbsp roasted unsalted sunflower seeds (optional)

*Note: I did not have capers, and do not like raw onions, so I left them out.

Steps:

  1. Mash the chickpeas with a fork.
  2. Add the rest of the ingredients and mix well.
  3. Serve on bread or on top of lettuce.
