The Amish are no strangers to frugality and this thick soup is no exception. It contains all sorts of pantry staples, including barley and lots of veggies. Serve with bread as dinner for a cold and rainy evening.

This is a recipe for a hearty, Amish style soup. Packed with good barley, brown rice and fresh vegetables. It is not only healthy, but tastes great! You may halve the recipe, but I like to make a large batch. We eat it a few nights, then freeze the rest for an easy meal another time. So convenient!
