Quick and easy kale chips. A healthy alternative to potato chips.

Preheat your oven to 350 degrees F.

Cut or tear kale into 1 inch pieces. Place kale in a medium-large bowl. Toss kale in oil, lime juice (or vinegar), and salt.

Place kale on baking sheet lined with wax paper. Bake at 350 degrees F for 5-7 minutes until kale is crispy.

A great way to prepare "The world's healthiest vegetable".

Cook the kale in a large skillet over medium-high heat until the leaves start to wilt.

Once the kale cooks down, stir in the garlic, olive oil, spices, lemon juice, and vinegar. Cook for a few more minutes until flavors have blended.

This was a quick hearty soup made with odds and ends from the fridge. We served it with warm bread. It was just as good leftover the next day. Feel free to add other veggies you may have on hand.

Total Time: 1

Yield: 6-8

  • 1 lb sausage, chopped (I used chicken sausage)
  • 1 onion, chopped
  • 1 Tbsp olive oil
  • 4-5 cloves garlic, minced
  • 3 carrots, sliced
  • 8 oz mushrooms, sliced
  • 4 Yukon Gold potatoes, diced
  • 1 bunch kale, chopped (substitute chard or spinach, if you like)
  • 4 cups chicken broth
  • Salt, pepper, chili powder and Italian seasoning to taste

  1. Sauté onions in oil for a couple of minutes, then add in garlic and mushrooms.
  2. Ad

  3. When the onions start to look softened, add in sausage, carrots and potatoes, broth and seasonings.
  4. Bring to just a boil then reduce heat and simmer for 20-30 minutes, until potatoes and carrots are cooked.
  5. Add kale and cook for about 5 minutes more before serving. Parmesan cheese would be a great garnish.

Does anyone have any really good ways they use Kale from the garden? It looks like I might have an abundance. I know that you can use it in salads and soups, but I was looking for another suggestion.

I just recently discovered how to fix kale. It is impressive in the field of detox, has a load of fiber in it and fights cancer of all things. It's considered a superfood. I slice it up into ribbons or bite size pieces and steam it on the stove for ten minutes. I read that steaming makes the benefits more accessible. Then I douse it with olive oil, vinegar or lemon juice, just a smidge, some grated cheese, garlic and a smidge of salad dressing of choice maybe. Oh, yeah, I put a load of garlic in the water that it is steamed with. Eat it regularly for the best results. I just started so can't make any claims yet.

Does anyone have a recipe for Kale soup?

Last week I made the best soup ever using kale, water, turkey, and chicken bouillon cubes. The only thing I measured was the water, 6 cups, and the cubes, 7. I measured neither the kale or the turkey. Simmered it for awhile. I used Redbor kale and just chopped it up raw. The turkey was scavenged off a carcass. It was one of the best soups I've ever eaten and I had my doubts about it before I made it. I served it with cornbread. Yummy!
