Spinach Pie for Breakfast

I love this pie so much it is a breakfast food for me. All the cheese makes the spinach taste pop out! I don't use the nutmeg, I think it competes with the flavor, but I included it anyway.


  • 1/4 cup chopped onion
  • 2 Tbsp. butter or margarine
  • 1 - 10 oz. package of frozen, chopped spinach thawed and well drained
  • 1/4 - 1/2 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1 - 8 oz. cup cottage cheese
  • 1/2 cup half and half cream
  • 1/4 cup grated Parmesan cheese
  • 3 eggs, lightly beaten
  • 1 - 9 inch unbaked pastry shell


In skillet, saute onion in butter. Remove from heat. Stir in spinach, salt, and nutmeg In a bowl combine the cottage cheese, cream, Parmesan cheese, and eggs. Mix well. Stir in spinach mixture. Pour into pie shell.

Bake at 350 degrees F for 45 - 50 minutes or until a knife inserted into the middle comes out clean.

Let stand 5 minutes before

Prep Time: 10 Minutes
Cooking Time: 40 - 50 Minutes
