What is linguica?
Editor's Note Linguica is a form of Portuguese cured pork sausage seasoned with onions, garlic, and paprika.
I have made Linguisa and cheese quesadillas. Slice Linguisa thin and brown in a frying pan. Drain and set aside on a paper towel to drain off more of the fat. Spray another fry pan with thin coat of cooking spray, place tortilla in bottom then layer mozzarella and then Monterrey Jack cheese on tortilla.
I don't have a recipe for Quesadillas but this can be used as a finger food for pot lucks etc. It uses linguica and cheese.
Linguica Puffs
1 lb. linguica, peeled and finely chopped
1 lb. sharp cheddar cheese, grated
3 cups Bisquick
3/4 cup water
In large bowl, mix linguica, Bisquick and water. Add cheese and thoroughly mix; mixture will be stiff.
Drop by teaspoon onto ungreased cookie sheet.
Bake at 375 degrees for 15 minutes. Makes 60 puffs.
