Cauliflower Salad

Ingredients:

  • 1 head cauliflower, chopped
  • 1/2 cup chopped onion
  • 1 pint mayonnaise
  • 10 oz. pkg. shredded cheddar cheese
  • 8 slices bacon, fried and crumbled

Directions:

Layer the ingredients in the order given in 9x13 inch pan. Cover with foil and chill. Stir before serving.

  • 3 Tbsp. chopped onion
  • 1 large tomato, chopped
  • 1/4 green pepper, chopped
  • cheese, diced
  • olives, chopped
  • 1/2 cup sour cream
  • 4 tsp. white vinegar
  • 1/2 Tbsp. sugar
  • dash salt

Directions

Combine first 6 ingredients in bowl. Blend remaining ingredients in small bowl. Mix dressing with vegetables. Chill in refrigerator overnight.

Ingredients

  • 1 head cauliflower, small pieces
  • 1 1/2 cups chopped carrots
  • 1 medium green pepper, chopped
  • 1 medium onion, diced

Directions

Pour small bottle of creamy Italian salad dressing over ingredients and refrigerate overnight. May substitute creamy onion or creamy garlic dressing, if desired.

Ingredients

  • 2 heads cauliflower, coarsely chopped
  • 1/2 cup cheese, grated
  • 1 onion, thinly sliced
  • Bacon, fried and crumbled
  • 1 cup mayonnaise
  • 1/2 cup sugar
  • 2-3 Tbsp. vinegar

Directions

Combine the raw cauliflower, cheese, onion and bacon. Mix the mayonnaise, sugar and vinegar and pour over the salad. Toss.

Ingredients

  • 1 med head cauliflower, in bite-sized bits
  • 1/2 cup mayonnaise
  • 1/4 cup heavy whipping cream
  • 2 Tbsp. Splenda
  • 1 tsp. spicy mustard

  • 2 Tbsp. onion, chopped
  • 3 Tbsp. chopped yellow bell pepper
  • 2 Tbsp. bacon bits
  • 3 twists each of salt and pepper - or to taste

Directions


Cook cauliflower in boiling salted water 10 minutes or so, until softened. While it's boiling, I parboil the bell pepper and remove the skin; rinse and drain.

I microwave the onions to soften them up a bit. Mix onions, yellow bell and bacon bits with cauliflower. Mix remaining ingredients and pour over veggies. Mix well and refrigerate overnight or at least a couple of hours. We prefer this served warm.

Creamy Cauliflower Salad

Sounds yummy! My note: I think I would use roasted red peppers. Parboiling makes removing the skin difficult. Roasting and putting the pepper in the bag makes removing the skin much easier! You can plop it on the grill or on your gas stove for a few minutes and the pepper will start to char, put in bag for a few minutes to steam the skin and it will slide off with a knife. (02/21/2009)

Boil 5 minutes. Pour over mixed vegetables. Chill.
