Healthier Banana Bread

I found this banana bread recipe online but changed it up to make it healthier and better suit my taste. It makes one large loaf or 2 small loaves. Makes a great gift too!

Ingredients:

  • 1/4 cup butter, melted
  • 1/2 cup applesauce
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 3 very ripe bananas, mashed
  • 1 cup plain all purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1 tsp. baking powder

Directions:

Combine butter, applesauce, sugar, eggs, vanilla and bananas. Mix well using a spoon. (Using a mixer will make it tough.) In a separate bowl, combine flours, salt, soda, and baking powder. Gradually add flour mixture to banana mixture, mixing with a spoon. Pour into greased and floured pan, and bake for 50-60 minutes. If using 2 small loaf pans, bake for about 45 minutes.

Prep Time: 15 Minutes
Cooking Time: 50-60 Minutes
