Homemade Salami

Ingredients

  • 5 lb. hamburger, cheapest kind
  • 2 Tbsp. sugar cure (see recipe below)
  • 2 tsp. mustard seed
  • 2 tsp. liquid smoke
  • 2 1/2 tsp. whole peppercorns
  • Advertisement

  • 2 1/2 tsp. garlic salt
  • 2 tsp. pepper

Sugar Cure Ingredients

  • 2 cup salt
  • 3 Tbsp. brown sugar
  • 2 Tbsp. black pepper
  • 2 Tbsp. red pepper

Directions

1st day: Mix thoroughly. Cover and refrigerate.

2nd day: Mix again. Cover and refrigerate.

3rd day: Mix again. Cover and refrigerate.

4th day: Roll into 3 rolls. Be sure to work out all air bubbles. Put in broiler pan and bake at 160 degrees F for 8 hours. Turn every hour. Cool and slice.

Mix thoroughly.

Thank you Trudy, this sounds really good. I love salami and I love making things homemade, it never occurred to me to try salami! Do you make it frequently? Just curious. I can`t wait to try it. cadia
