Hawaiian Banana Nut Bread

Ingredients

  • 3 cups flour
  • 2 cups sugar (1 white, 1 brown)
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1 cup chopped nuts
  • 3 eggs, beaten
  • Advertisement

  • 1 1/2 cups vegetable oil
  • 2 1/2 cups mashed ripe bananas
  • 1 can drained crushed pineapple (8oz.)
  • 2 tsp. vanilla

Directions

Combine dry ingredients; stir in nuts and set aside. Combine remaining ingredients, add to dry ingredients, stirring just until batter is moistened. Spoon batter into 2 greased and floured 9x5 inch loaf pans. Bake at 350 degrees F for 65 minutes or until done. Cool 10 minutes before removing from pans. Cool completely on wire racks.

As soon as I saw the name "Hawaiian Banana Nut Bread" I had to try it and that's just what I did. I substituted half the flour with whole wheat pastry flour. Man this bread is delicious!
