Chicken Chunk Casserole

Ingredients:

  • 1 medium chicken
  • 1 pkg. wide noodles
  • 2 cans cream of chicken soup
  • 1/2 green pepper
  • 1 medium onion
  • 1 celery stalk
  • 1 small can mushrooms
  • 1/2 soup can milk
  • 2 Tbsp. basil
  • salt and pepper to taste
  • shredded cheddar cheese, opt.

Directions:

Cook chicken and cut in chunks. Mix with cooked and drained noodles. Saute green pepper, onion and celery with mushrooms in butter. Heat cream of chicken soup and milk. Mix all together and sprinkle with basil, salt and pepper. Top with shredded cheese , if desired.

This is all cooked already so no need to heat unless you want to put in the oven for just a few minutes to warm it more.

I have read that 3 cups of cubed cooked chicken equal a whole cooked chicken. This sounds like a good recipe and having cooked chicken on hand would make it quicker to prepare. I'll have to try it soon.
