Substitute Mayo for Egg in Baking

When you are short one egg for a cake mix calling for 2 eggs, use 2 tablespoons of mayonnaise, you will never know the difference.

I use this technique when making g cornbread batter. I use a tablespoon of mayonnaise and water. The mayonnaise has eggs, oil in it, if I have milk I will use milk, if no milk is available, I use water. The cornbread comes our of the oven Delicious!
