Baked Tomato Omelet

The flavor of the Swiss cheese and chives is what makes this one extra tasty.


  • 6 eggs
  • Salt and pepper to taste
  • 3 Tbsp. Swiss cheese, grated
  • 2 tsp. fresh chives, chopped
  • 2 tsp. butter, softened
  • 1 medium tomato, sliced


Preheat oven to 425 degrees F.

Beat eggs, cheese, chives, salt, and pepper in a bowl with a fork or whisk.


Evenly spread butter in an ovenproof dish, arrange tomato slices over the bottom, cover with egg mixture and bake for 15 minutes or just until eggs are cooked.

We will certainly be trying this one Deeli. Just about anything with "tomatoes" will make us happy even if it has no meat at all in the recipe. This will make a great Sunday morning "go-with" a nice pot of Cheesy Grits and hot biscuits.

I wouldn't hesitate to try this using whole canned tomatoes (drained and sliced). Might be slightly different in texture, but wouldn't alter the flavor all that much.


We'll soon have nicer weather for using the oven more in the mornings. Yippee!
